Dessert DIY: Molten Lava Cake Recipe

A moist cake outer shell with warm and gooey chocolate that oozes out? Yes, please and make I'll take three! Here is why I love lava cakes: they combine two delicious desserts in one and while each on it's own is pretty darn good, together it's like a decadent explosion of flavour in your mouth. I rarely actually get the chance to make them though. So when Lisa, of Rice Pudding and Buttermilk Pancake fame sent me a recipe and these incredible photos of lava cakes that she made, I said: 'done deal lady, let's do this thing'!  

Here is Lisa's recipe for lava cakes: 
 
Molten Chocolate Cake, makes 6 servings

Ingredients:


6 oz (175 g) bittersweet chocolate
2/3 cup (150 mL) unsalted butter
1/3 cup (75 mL) sugar
6 egg yolks
3 egg whites
1/3 cup (75 mL) all-purpose flour


Chop chocolate to easily melt 
  

Directions:
 
Preheat oven to 425 degrees F (220 degrees C). In a heavy pot, on low heat, melt chocolate and butter together. Cool slightly.


Separating eggs 
 
Beat together sugar and egg yolks until thick and creamy, about 4 minutes.

Pour in chocolate mixture and beat together for 5 minutes.


In a separate bowl, beat egg whites until stiff peaks form, about 3 minutes. Fold into mixture along with flour. 
 

Pour into 6 buttered molds of non-stick muffin tins or oven safe ramekins. Bake for 5-7 minutes or until edges are just cooked and centre is still liquid.
 

Cool for 5 minutes in tins. Carefully remove to serving dishes. Serve with whipped cream or icing sugar and berries (as shown).

@LissaG If you are in Canada, I know that I have found them at the Dollarama for like 2 or 3 for $1.50 or $2 I think. Also try like a Winners or Home Sense and a Wal Mart!
