Pumpkin Whoopie Pies Recipe

We conquered the pumpkin spice latte, pumpkin mousse and even pumpkin scones and now... how about some Pumpkin Whoopie Pies? Whoopie pies are making a comeback and they definitely deserve all the attention they're getting! 

If you've never had one before- prepare for a treat! They're a cookie/cupcake/sandwich hybrid full of sugar goodness and just a little spice. This recipe will make a fabulous dessert table item for any fall or winter get together or have one with a coffee for some afternoon deliciousness! 

What'll you need:



(makes apx. 18 whoopie pies, depending on size) 

2 cups packed brown sugar
1 cup vegetable oil
1 1/2 cups pumpkin puree
2 eggs
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
1 1/2 tablespoons ground cinnamon
1/2 tablespoon ground ginger
1/2 tablespoon ground cloves
 
Directions: 

1. Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets with a little butter or spray. 

2. Pack the two cups of brown sugar and put into large bowl. Pour in oil and mix to combine. Mix in the pumpkin and eggs, beating well.
Tip! Beat eggs lightly before pouring into bowl to get a fluffier cake. 



3. Add the flour, salt, baking powder, baking soda, vanilla, cinnamon, ginger and cloves. Mix well.
 


4. Using a laddle, ice cream scoop or large tablespoon, drop spponfuls of mixture onto baking sheets. They will rise and expand so be sure to leave room (apx. 2 inches) inbetween each one and to not make them too big! Bake at 350 degrees F (175 degrees C) for 10 to 15 minutes. Let cool. 

Now it's time to make your whoopie pie sandwiches! I like this recipe for cream cheese for the creamy center:

1 stick Butter, Softened
1 package (8 Ounce) Cream Cheese, Softened
4 cups Sifted Powdered Sugar (more as needed)
1/4 teaspoon Salt3 teaspoons Vanilla Extract 


Combine all ingredients together, mix well and you're finished! Frost the bottoms of the whoopie pies, stick them together and put them in your mouth- yummmm!

Omg I made these from a recipe I found on tumblr a few weeks ago. They were delicious!!

My recipe had maple cream cheese frosting though; in addition to the vanilla extract you add 3 tbsp of real maple syrup, or in my case if you don't have the real stuff, 1 tsp of maple extract (why I had maple extract and no real maple syrup I could never tell you lol)
