I'm a vegetarian, and I have been for about 7 years now. I was wondering if any of you Chick's know any amazing vegetarian recipes! I would love to give them a try. :) I love chick peas and I love spices as well. Please share your favourite vegetarian recipe, thank you!!

Quinoa and black beans
1tbsp olive oil
1tbsp garlic chopped
1tbsp chilli powder
2tbsp tomato paste
2cups chicken broth
1can black beans, rinsed and drained
1. In saucepan heat oil over med-high heat; cook onions, garlic for 2 or 3min, stirring often, or until starting to soften. Add chilli powder: cook, stirring, for 30sec. Add tomato pasta; cook, stirring for 1min. Add broth and salt. Bring to a simmer over mid- high heat. Stir in quinoa and black beans; reduce heat to low, cover and cook for 20min.
2. Let stand off heat, covered for 5min.

You can use vegetable broth too :)

It is sooo good. We are meat lovers in family, but this one is amazing on its own, my hubby didnt even notice absence of meat :)

How about portobello mushrooms to replace meat? You can grill them whole and then build a burger, or cut them in strips and stirfry as you would strips of meat and then make fajitas. I've also stuffed them with sauteed spinach and baked them in the oven with some cheese on top. So yummy!

Those portobello mushroom ideas sound really good. I have tried portobello mushroom before and it's really tasty! It's like meat for vegetarians and they are so thick and juicy yum! I'll have to try the one with spinach and cheese as well that sounds really good.
