My husband had an assignment over the weekend for his Nutrition class. He had to take a recipe and make it healthy. I found this one and it is de-licious. Kind of made me sad that he had to take the whole thing to class this morning.
2 cups sugar
2 cups flour
2 t baking soda
1 cup chopped nuts (I use almonds)
Mix well. Then add:
19oz crushed pineapple with juice
2 t vanilla
Bake at 350 in a 9x13 pan for 45 minutes (I actually only need about 40 min)
1 cup icing sugar
1 cup of cream cheese
1/2 cup margerine
2 t vanilla
Spread on warm cake and chill for about 2-4 hours before serving.
It was delicious! To make it healthy we substituted regular sugar for brown sugar, used whole weat flour, and light cream cheese and it tasted exactly the same as the original recipe. Recommend it. Only problem with it is now I feel I can eat more of it...

It should be a rule that if you are going to post about cake, that you MUST post a picture of said cake ( I am only half teasing)
So what's the texture like? Fluffy? Dense....is there a title for this cake-have you named it?

Unfortunately, my husband did not take a picture like he was supposed to! The texture turned out to be dense but moist. It kind of reminds me of the texture of carrot cake. Which is actually a cake I HATE but this I liked. I think it might be the cream cheese icing that makes me love it so much :)
The name of the cake is "Best Ever Cake". It's actually a recipe I got from someone at my bridal shower on an index card so I don't know where the recipe originates from.

I know I am only speaking for myself (at the moment) but I think you should bake this cake again and ship it to me!
My mouth is watering right now and all I have are rice cakes....boo.

I actually really like carrot cake, and I`m not a huge fan traditional cake recipes. So this recipe could be right up my alley!
