Pasta salad is my go-to for lighter meals, with finely diced broccoli, radish, pickles and cheese, mixed with a can of drained tuna and mayonnaise, sprinkled with seasoning salt.
If we're serving steak or something like than, I sometimes steam potatoes in the microwave for a few minutes, then wrap them in foil and finish them on the grill. Or the classic sliced potatoes & carrots & onions in a foil pack with butter, salt and pepper, roasted on the grill.
Sliced cucumbers in mayo or sour cream with salt and pepper and lemon juice is quick and simple, and usually goes over well. So does greek salad... and if you sub lemon juice for vinegar in your dressing, you don't have to worry about keeping it refrigerated.
Sometimes we do grilled corn on the cob, but I have a hard time cooking it right.
Google has lots of recipes, too... I've found a few online that I still have to try. Good luck.

I saw a great looking Corn Salad recipe on people com the other day. It looks really yummy. I know the point is to use fresh corn on the cob for simplicity and quickness, but I really like the idea of using corn that you have grilled on your BBQ first... just a suggestion :)
