I like to make a big pot of soup on the weekend, portion it, and bring it in for my lunch. Last week I made minestrone and a white chicken chili.

mmm good idea, soup for a few days lasts, for lunch and dinner too...
A soup is not enough for me to last the day though so a small side to soup?

I have either salad with lots of veggies and chicken/chickpeas/or egg on top for protein; homemade chili that I freeze in separate containers for easy healthy lunches; leftovers; or homemade jar soup with Asian noodles, leafy veggies, shredded carrot, Asian spice mix, sesame seeds, and mushrooms. Just add boiling water at lunchtime, sit for 2 minutes, and it's ready to eat with chopsticks. SO yummy!
I like convenience, healthy eats, and quick to prepare foods. I rarely buy lunch.

MMMM chickpeas and chicken is a good one. with some spice and easy to make thats a good one.
Lately as you can see been going to subway a lot, literally right beside my work place, but I need to start bringing in and making healthy lunch choices to work

I love making homemade soups - chicken noodle with wild rice and lots of veggies, spicy chicken tortilla, veggie and pasta, tortellini and veggies.
I tend to make too much supper and take that for lunches.
