I am having a bumper crop of zucchini and running out of ideas!I have made so many zucchini loaves,breaded zucchini and grated and froze lots for future cooking but they keep on coming! I've also been giving them away and donated to the food bank and everyone here is getting sick of them lol...Does anyone have some great recipes/ideas?Thanks in advance :)

I'm not sure if you can do this with zucchini because I haven't tried it. Have you ever sliced it into rounds, lightly breaded it and then fried it and served it with sour cream for dipping. I have a recipe like this that I use for eggplant, but I don't see why you couldn't give it a try with zucchini, unless its to dense of a veggie do do this with. Let me know if you'd like to give it a try and I'll send you the recipe. I know its really good with eggplant. I bet your having such a great crop because of all the wet weather you had this year.

@Takoda -Thats what I meant by breaded zucchini.I have been cutting them in rounds and doing a egg/milk wash and then dipping in a bread crumb/cornmeal and spices then frying them.I love the idea of a sour cream dip to go with them.Is your coating different?What do you use for coating?
@mystictiger-I do actually do canning... I've actually been overloaded with dill cucumbers as wel and canning those like crazy.I will see if I can find a recipe to can zucchini I have never tried that!Yes they are very good on the barbecue!Thank you.

How about just shredding it up and putting in freezer. Later you can add some extra nutrition to your pasta sauces or meatloaf without the kids knowing there is veggie in it :)

@takoda-I'm like you I also have giant tomato plants this year its gotten very hot here so everything is taking off....I don't have a very big garden now since moving so just the basics-tomatoes, cucumbers,herbs,hot peppers,zucchini,garlic,onionsI did try a few different tomato plants this year for a change black pineapple,fuzzy peach,black prince and green zebras so far there looking really cool.
There are also soooo many plum trees here there everywhere and most all wild...Thats why we get so many bears around, there having a feast off the trees lol...Wow that's lots of recipes above they just popped up as I was writing this!Theres a few I'm curious I will get back to you.. but very curious about the zucchini pickle recipe! @crysrob-That is how I freeze mine as well grated and air locked in freezer bags its great to have during the winter months...Yes the food bank always gets over looked its just up the hill from me in a church I see the signs all the time so I stopped by and they were so ecstatic to receive produce..

I remember a friend saying that she'd go door to door in her neighbourhood to unload her extra zucchinis. Didn't always have takers though, so if there was no answer at the door she'd just leave it on the front step with a sticky note saying "Enjoy!". She would laugh about abandoning her orphan zucchinis on people's doorsteps :) That's part of the reason I haven't bothered with a garden in years (even though I truly enjoy it), because I have so many neighbours eager to unload their extra produce! Now to find a neighbour with too much wine and chocolate... hm.
