Compared to a homemade carrot cake, this fell short, but not a bad cake in comparison to other premixed carrot cakes. It was moist, and nicely spiced, I just found it to be a little lacking in carrot consistency.

This cake mix is great. I add a can of drained pineapple and a little coconut. It's so good tastes like homemade. And icing should be cream cheese. I have used both store brand and home made. Both tastes great!
