I love making Quinoa. I'll make a big pot for dinner and serve either salmon or grilled chicken (If i have time i'll make rotisserie chicken) and then greens like kale or beans on the side.
Then I'll use the extra meet and quinoa to top my salad for lunch the following day.
Do not get me wrong, I am not usually a very healthy person, I'd prefer pizza every night, but this is my go to healthy meal that i enjoy most weeks.

I love crock pot recipes, just throw the ingredients in the morning and come back to a nice piping hot meal.
