It may be crazy, but I love Hamburger Helper. We also have tacos or fajitas about once a week. Then some chicken cooked in VH sauce...either garlic, or Butter chicken, served with some rice. Meatloaf is pretty easy, and you can make 2 and freeze one for the future. And of course, make a HUgE spaghetti sauce, and freeze some, and you always have a great meal in 20 minutes!

Quesadillas are a top fave at my place. they're fast to make and you can load so many healthy good things into them

I like meatloaf cupcakes because you can pack them full of veggies also.
We've also been eating stuffed peppers lately. Super tasty!

English muffin pizzas. When I was a kid my mom would prepare the toppings then we got to make our own.

Great ideas ladies. Working full-time makes it hard to prepare elaborate meals.

Chickpea salads are a favourite of mine! You can add whatever veggies you like, and for added protein and other nutrients, you could add in some quinoa (only has to be cooked for a few minutes). Because this keeps well in the fridge and tastes good cold, you can easily make the whole salad ahead of time and leave it overnight, then eat it for the next couple of days depending on how much you make.

My kids fav meal is still "taco soup". Served in a bowl with whole wheat nachos on the side...Veggie or turkey chili on a bed of corn with a sprinkle of cheese on top (sometimes add a veggie face for fun). I grate the veggies so they don't even know they're there :)
