How about adding variety, much like a bento box would have? My students have really loved this option better than the standard one plate meal (unless it involves gooey, stringable cheese that goes on forever!). The bento boxes are great, especially for children who get easily bored or frustrated having to eat a whole portion of one particular food in one sitting. Breaking it up into smaller portions of various, nutritional favorites can motivate him/her to finish their meal and actually look forward to lunch time. Since the portions look smaller, they won't be as ready to give up but you'll provide them with enough variety to make it a meal, therefore, it's still very nutritious and filling. It's sort of like a mini buffet! You can find plastic containers at the dollar store that have separate compartments, or use cupcake liners to separate each food. Pinterest has so many great ideas for this.
Kids also love getting interactive with their food, so why not let them build their own lunch? Some crackers, cheese and lunch meat can be stacked together to their liking. Mini hamburger sliders or building their own mini pita pizzas are other options. You can put some grated cheese aside for them and they can sprinkle it over their pasta for extra flavour. Veggies with some dip allows a little extra step or have them take their food apart like with a fruit kebab on plastic skewers. I also agree with @dandy_123. Making their lunch look "fun" can encourage them to finish their meal.
Also, don't forget a little positive note from Mommy for him to find as he opens his lunchbox. Kids really love this added surprise and it sets them off in a good mood for the rest of the afternoon.
