I love to eat healthy but let's face it, sometimes healthy eating isn't always the easiest option.  If you know easy and healthy recipes please share!

Anyhow, when I am looking for healthy recipes I like to go to this site:

Many of the recipes are fairly simple and some even post nutritional info so you know exactly how much calories, fat, fiber, etc. a particular dish contains. The photos are gorgeous and each recipe features an "easiness" rating. I hope you like : )

The Easiest

There are soooo many easy, delicious salad recipes out there! I know, salad is kind of obvious for eating healthy. But it's so easy to be adventurous and try new exciting ingredients, and all you have to do is wash, chop and throw it all together :)
There are tons of yummy salad kits available for on the go too - I just tried this one called "Fresh Attitude" with aragula, mandarins, little sesame crackers and a creamy balsamic dressing, it was awesomeeee.
You can use mesclun, arugula or any type of greens that you enjoy, and pair it with a fresh fruit (like peach, mandarin/orange, raspberries, pear, etc!) as well as veggies. Then add any kind of nut, like pecan or almond to add some crunch, and make up a simple vinagrette if you don't have any dressing on hand (like 1 part balsamic/red wine vinegar/lemon juice/orange juice/etc and 2 parts oil). So much flavour and lots of goodness :)

You can (should) also add any kind of cheese you think would be good as well ;)

Have you tried Kraft.ca

They have lots of healthy recipes, they even have a section for people that are diabetic.
If you sign up they will send you a free cook book in the mail for every season of the year and a Holiday cook book.
They aren't just those small flyer type of books either, they're nice size books.
Then you can have healthy recipes on hand when ever you want them, plus some really good goodies for the time you just want something good to eat.

Quick Easy Recipes That are Healthy

We like to think we eat healthily at our place. I use hardly any cooking oil in any of my cooking and we eat lots of fresh vegetables and fruit. One thing about healthy cooking is, it has to be done fast, so as to retain the nutrients, so the produce has to be top quality.

OK. Here is the smoked chicken salad I did last week that was polished off in no time at all - It looks fabulous and tastes divine and takes no time at all to prepare.




Smoked Chicken Salad:
Just Add:
• 500gm/ 2 - 3 Smoked Chicken Breast, sliced finely

• 400gm/1 Tin Lentils, drained

• 1/2 Head Lettuce

• 1 Red Capsicum, sliced

• 8 Cherry Tomatoes, cut in half

• Wide Shallow Pasta Bowl

Arrange Salad:

• Arrange vegetables on the outer edges of the wide shallow bowl


• Pour in drained lentils into the center section

• Arrange sliced smoked chicken breasts over the salad and lentils.

• Salt and freshly ground pepper to taste.


This really is a yummy meal in a flash.
