Quick & Easy

While it isn't my absolute favourite, this is a routine meal in our house. Everyone loves it even my 2 year old Grandson. Scramble fry 1-1 1/2 pounds of ground beef. Add two cans of cream of celery soup and about a can of water. Let simmer on low. It will thicken up again. In the meantime cook 500g of spaghettini pasta. Once the pasta is done to your liking, drain and add soup mixture. Done! Some of my family members add Parm cheese to it. We do not cook with salt but you can add some to taste. Quick and Easy

We have quite a few favorites in our household my husband and oldest son loves pasta dishes one of them is Spaghetti ground beef ,with garlic any spices that you like to add to it I add Italian spice ,Beef spice and Chicken spice a little salt and pepper with Catelli meat sauce it tastes so good we also like to sprinkle parmesan cheese on it

My family enjoys my seafood chowder. It's quite expensive to make (approx $140 for a very large pot, depending upon the season). Lobster, crab, shrimp, salmon, haddock, clams, etc. All in a cream based stock with diced potatoes & bacon and a special seafood seasoning blend. I don't make it often.
They also enjoy a very inexpensive casserole: seasoned lean ground beef, scramble fried and added to either homemade or packaged mac&cheese;(cooked & prepared). Mix together, add peas (or vegetable of choice - fresh, frozen or canned), pour into 10x13 pan. Add topping and / or shredded cheddar cheese and bake for 25 mins or until toppong is crisp and slightly browned. For topping I use whatever is on hand: crushed crackers (triscuit, vegetable thins, Ritz, etc), bacon bits, chives, garlic, Italian seasoning, tex-mex, Greek seasoning - whatever). Maybe crushed potato chips or crispy French onions. Whatever your preference for toppings. My daughter is a vegetarian so she uses fake ground beef as a substitute when she makes it.
My most requested dish is probably poached salmon (either very basic lemon slices, butter & fresh ground salt & pepper or crusted with chipotle mango seasoning). This is the easiest, least stinky smelling, fastest way to prepare fish. It can even be done in the microwave! The salmon will be so perfect it melts in your mouth. Every person who has ever tried it has loved it, even those who don't like fish. Served with potatoes (roasted baby potatoes, garlic mashed potatoes or twice baked potatoes with sour cream, bacon & chives). Sautéed vegetables (asparagus spears, chopped zucchini, mushrooms) and whole garden carrots or baby carrots, lightly steamed or boiled in water and white sugar. It makes the carrots slightly sweet tasting and delicious!
Another favorite is bacon wrapped stuffed chicken breasts. Pound boneless, skinless chicken breasts until thin, top with whatever you want. I use spinach, cheese, seasoning, diced tomato. Roll up. Wrap rolled breasts with 1-2 bacon slices and pierce with a NON flavored, plain toothpick to hold in place. Place rolled up chicken breasts in a glass baking dish with a drizzle of EVOO on the bottom of the dish and bake about 40 mins depending on how much chicken you use.
Caprese salad: drizzle EVOO on a salad plate, layer thickly sliced tomato, FRESH sliced mozzarella, basil leaves. Finish with a light drizzle of EVOO and sprinkle sea salt & fresh ground pepper. Easiest and freshest salad ever! The salt brings out the flavor & juices of the fresh tomato.
One last family favorite: spinach salad with grilled chicken, bacon bits, shredded mozzarella, mandarin orange segments, sliced hard boiled egg, red onion, poppy seed dressing, etc. Can be served in wraps or pita bread.
Oh, I almost forgot. Another favorite in my home is baked potato soup from scratch. Only a few ingredients but I use a special poultry seasoning to add to the flavor of the stock.

I have a recipe for Mary Browns fried chicken batter that my family and I are obsessed with, we don't have it a lot because it's not too healthy but it's soooooo good!

8 cups of flour
3/4 cup of salt
3 tbsp black pepper
1 tbsp white pepper
1 tbsp garlic powder
1 tbsp cayenne pepper
1 tbsp cumin
3 tbsp oregano
1 tbsp thyme
1 tbsp paprika

Dip chicken pieces in egg than add to batter mixture and deep fry.

I also have a chili recipe that I love,

3 pounds of ground beef
3 cups of beef broth
1 15oz can of kidney beans
1 14oz can diced tomatos (don't drain)
1 15oz can tomato sauce
1 6oz can tomato paste
1 tablespoon cider vinegar
2 large onions, diced finely
3 tbsp garlic powder
3 tbsp chili powder
1 tbsp sugar
3 tbsp cumin
1 ts thyme
1 ts oregano
1 ts black pepper
1 ts cayenne pepper
( If you want lots of heat you can add 4 chipotle peppers, diced finely)

Cook and drain beef, add onions and cook till softened.

Add all spices and cook for 10 minutes.

Add broth, beans, tomatoes, tomato sauce, tomato paste and vinegar.

Cook on low for 2 hours.

Here's an easy one. And so good.


  • 8 (4 oz each) boneless skinless chicken thighs, trimmed of fat
  • 1 teaspoon kosher salt
  • fresh black pepper, to taste
  • cooking spray
  • 10 medium asparagus, ends trimmed, cut in half
  • 2 red bell peppers
  • 1 red onions, chopped in large chunks
  • 1/2 cup carrots, sliced in half long, cut into 3-inch pieces
  • 5 oz sliced mushrooms
  • 1/4 cup plus 1 tbsp balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, smashed and roughly chopped
  • 1/2 tsp sugar
  • 1 1/2 tablespoons fresh rosemary
  • 1/2 tbsp dried oregano or thyme
  • 2 leaves fresh sage, chopped


  1. Preheat oven to 425°F.
    1. Season chicken with salt and pepper. Spray 2 large baking sheets with oil.
    2. Combine all the ingredients together in a large bowl using your hands to mix well then arrange everything onto the prepared baking sheets spread out in a single layer.
    3. The vegetables should not touch the chicken or it will steam instead of roast.
    4. Bake about 20 to 25 minutes, or until the chicken is cooked through and the vegetables are roasted and tender.


    Yield: 4 servings, Serving Size: 2 thighs
