5 Mouth-Watering Sandwiches to Brighten Up Your Work Week

Brown bagging it this week to work? Me too. Usually bringing a lunch to work brings disappointment. Blergh- yet another pb+j? Boo. However, brown bagging it doesn't have to mean boring. We found 5 recipes for innovative and delicious sandwiches. It's oh-so-good-you'll-never-pay-for-lunch-again! 
 
Monday: Spicy Crab Sandwich 


Combine crab meat with sesame oil. Chop up Thai chilli, a garlic clove and scallions and put over top. Then add chopped napa or savoy cabbage and sprinkle some lemon juice on top. 

Tuesday: Fig and Prosciutto 
 

Add sliced mozzarella, fig and layers of prosciutto with arugula on a ciabatta bun and grill in a panini press. 

Wednesday: Grilled Chicken and Roasted Peppers 
 

Puree roasted red peppers with balsamic vinegar, olive oil and salt. Spread onto bun, then top with grilled chicken breast, arugula and drizzle with a bit more balsamic. 
 
Thursday: Roast Beef and Horseradish 
 

Mix some horseradish with mayo and spread onto whole wheat bread. Put on thinly sliced roast beef, cucumbers and a spicier green like arugula. 

Friday: Smoked Salmon on Pumpernickel
 

Spread cream cheese on pumpernickel and top with smoked salmon and dill.

The fig and prosciutto and the grilled chicken and roasted peppers sound really good to me! I could use either one right about now, but of course I don't have the ingredients in the house to make either right now. Bummer!

The smoked salmon on pumpernikel bread looks delicious! I'm not sure that I could handle that much dill being on my sandwich though, so I'd have to cut it back just a little. Now I'm hungry!
