Valentine's Day Dessert: Red Velvet Cupcakes For Two Recipe

Today is Valentine's Day and while the whole 'flowers and evening out' thing is great, it's really just about being with your sweetie. So tonight, why not stay in with your Valentine and munch on some delicious and decadent red velvet cupcakes? This recipe makes four cupcakes, the perfect amount for two people (because let's face it, can you ever eat just one?). 

Pair these red velvet cupcakes with some bubbly champers and some chocolate covered strawberries and you've got yourself one heck of a night! 

Ingredients:

1/3 Cups + 1 Tbsp Flour 
1/8 Tsp Baking Soda
1/8 Tsp Salt
2 Tsp Cocoa Powder
1/4 Cup Canola Oil
1/4 Cup Sugar
2 Tbsp Buttermilk (or substitute, tutorial over here
1 Egg White
1 Tsp Red Food Colouring 
1/8 Tsp White Vinegar 
1/4 Tsp Vanilla Extract 
 
Prep: Turn over to 350F and place cupcake papers into tin
 

In medium bowl, add flour...


...then add baking soda, cocoa, and salt. Whisk together.


In a separate and larger bowl, beat together canola oil, sugar, buttermilk, egg white, red dye, vinegar, and vanilla.

Next, add the dry ingredients to the wet ingredients slowly and in installments, making sure to mix after each addition. 

Pour into cupcake tin and bake for about 20-25 minutes. 

Decorate and Frost 


Top off with some cream cheese icing (recipe over here) and sprinkles, of course (since no Valentine's Day cupcake would be complete without them)!
