Healthy Foods and Eating Right: Kale Chips Recipe

6 months a go, if someone had told that I was would be writing about healthy foods and recipes, I would have advised them that aliens had indeed landed and to be careful, because one had clearly taken over my body. I've never been one to be all about the veggies yet, here I am today with a healthy snacking option and I swear, I'm not an alien. My new year resolution this year was to start taking better care of myself. So, I've been eating healthier, getting active and treating my body with lots of TLC.  

Kale is one of the healthiest veggies around. It has rich, dark green leaves and it's loaded with iron, calcium, vitamin C, vitamin K and Carotenoids (which provide vitamin A). Now, confession time, I eat kale because it's so healthy but I'm not a huge fan of it's bitter taste. Enter in: kale chips. Since discovering this recipe, I've been making it every weekend because it's so easy, fast, low cal and great tasting, all while getting the nutritional benefits of kale. 


Here's what you'll need (this recipe is for about one-two people/servings):

Kale (for myself, I use anywhere from 5-10 individual stalks of kale, depending on my ravenous hunger!)
1- 2 tsp Olive Oil 
Lemon Juice (just a few drops) 
White Wine or Rice Wine Vinegar (I'm a fan of sour, tart flavours so for 1-2 tsp of olive oil, I usually match this and add a bit extra, but you can also go easy on this ingredient too)
Sea Salt
Pepper

Prep: Preheat oven to 375 degress. 
 
Step 1: Cut Kale 
 
 
 
 


Wash the kale and dry with salad spinner. Cut out the stem of the kale, leaving behind the leaves. Then, cut the leaves horizontally into pieces big enough (because they will shrink) and small enough to easily much on.

Step 2: Prep Dressing

 

I like pour all my ingredients into a small container first and stir to mix. You don't actually need to use the ingredients I've listed. If you aren't a fan of more tart or salty flavours, you can skip the lemon juice and vinegar and go only with olive oil. If you want a bit of spice, add some cayenne pepper. Try spices like cumin, ginger or BBQ seasoning- go wild with it!

Step 3: Coat Kale 


Lay out all the kale on a baking sheet. I like to spray the baking sheet first with spray canola oil but you don't need to. Drizzle the oil mixture all over the kale. Use a brush to coat the leaves and use a spatula to toss the kale leaves too. Sprinkle salt and pepper over the coated leaves. Put in oven and bake for about 15 minutes or until the kale is cripsy and browning. Not all the leaves will be crispy, that's ok- that means there is extra flavour!

Step 4 (optional, for the foodies): Food Yeast


I found out about this product just last weekend and I absolutely need to share it with you. It's called nutritional yeast flakes and it is a protein supplement and a cheese substitute for vegans. It has a nutty, cheesy taste to it and you can sprinkle it over anything from veggies to popcorn. It's hard to find in stores, I found mine at a grocery store in their health food section. I'm trying to get in more protein right now so I sprinkled this on my chips- delish!  

Final Product


After taking out your chips, they should look at little something like this. You can see the fresh kale in the background and then how it will looked when baked. These are crazy addictive but they're also guilt free because they're so healthy.

I love Kale chips!What a wonderful recipe thank you :) I used to buy Kale chips all the time at Whole Foods....The nutritional flakes also known as Engivita Yeast is so good for you and really good sprinkled on popcorn.

restaurant we used kale to decorate the salad bar, why I don't know, I
just know it was a pain in the but to lay out every morning. So after
doing that everyday for a good four month it turned me right off of the
stuff, but I'm sure many of the other members will enjoy this recipe.
