Peanut Butter Cookies With Chocolate Chips

Our excuses to eat comfort food are getting thinner as the weather gets warmer, so before our house becomes to hot to think about baking we're whipping up a batch of these simple and rich peanut butter cookies to enjoy with some steamed milk.

Peanut Butter Cookies With Chocolate Chips


1/2 cup white sugar
1/2 cup brown sugar
1/2 cup natural peanut butter (crunchy or smooth)
1/2 cup softened butter
1 egg
1 1/4 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 cup dark chocolate chips

 
Cream together the white and brown sugar, peanut butter and softened butter. Next add in 1 egg.
In a separate bowl combine flour, baking soda, baking powder and salt.
Mix the dry ingredients into the wet and then add in chocolate chips.



Drop spoonfuls onto cookie sheet.
Bake at 325 F for 12 to 14 minutes, or until slightly golden around the edges.
Makes about 2 1/2 dozen cookies.



Variations: If you like a chewier cookie, increase oven temperature to 375 F and bake for 10 minutes; change up the flavour with M&M's, butterscotch or white chocolate chips; or for a fancy looking cookie, omit chocolate chips before baking and dip baked cookies in melted chocolate.

I've also heard adding a package of vanilla instant pudding to cookie dough can make your cookies super chewy. I have tried it, and it makes the chewiest, softest cookies you can imagine!
