Alexandra's Cozy Night In - Winter Ginger Beer Cocktail Recipe

This recipe is my own concoction (well, I did have some help from the BF), but I did all the heavy lifting (mostly). I made it one wintery, snowy night and it was just what I needed as I curled up on the couch. It's become my signature cocktail for this major cold spell as it warms you right up and it pairs sweet and spicy perfectly. It's not difficult at all ('cause y'all know me and how lazy I am in the kitchen), but it takes a little bit of time. I recommend making the syrup in a larger batch to save and next snow day, you can whip a cocktail in no time at all. 

Here's what you'll need to make my super delicious cocktail:

Ginger Simple Syrup 
Crabbie's Ginger Beer (I prefer the orange flavour for this, but you can also try the original ginger beer)
Gin 
Orange (for garnish and juice) 
Thyme or Rosemary (optional)

Step  #1: Make Your Ginger Syrup


I've told you before how to make a simple syrup, but here's a quick breakdown: 1 cup water, 2 cups sugar, boil and add sugar. Stir until a syrup consistency. To make a ginger simple syrup just chop up some fresh ginger and add to your mixture to let the flavour infuse. I found this DIY for a ginger simple syrup with peppercorn which is an awesome idea, so try that too! 

Step #2: Gin 'n' Beer


To a tall glass with ice, add 1 ounce of gin, 1-2 ounces of syrup (depending on your taste preference, I usually do two) and fill the rest of the glass with ginger beer. 

Step #3: The Extras 


1. Add a squeeze of orange to your cocktail and garnish with a slice too. 

2., 3. Thyme or rosemary make a good addition to the cocktail if you're in the mood. 

4. Ginger can be an intense flavour and if you're like me you want it a little more subtle. Add ice. The coldness takes it down a notch.

I love a nice glass of slightly chilled Pinot Grigio. When I'm really cold, I go for either a Black Russian or some Bailey's (both on the rocks).
