Easy Gingerbread Cookie Recipe

This could also be called Lazy Gingerbread Cookie Recipe because I took out all of the ingredients I deemed unnecessary (yes, even the ginger) to make these as simple as possible. Great for people with short attention spans or if toddlers are present.
Ingredients:
3 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground cinnamon
1/2 C Butter
3/4 cup dark brown sugar
2 Eggs
1/2 cup molasses
2 teaspoons vanilla

Directions:
Preheat oven to 375.
Combine sugar, butter, vanilla and egg, then add molasses. Add flour, baking powder, baking soda and salt then stir together.
Chill dough in refrigerator for about an hour. It will be a little tough to roll out but will quickly become easier.
Roll out a portion of the dough on a lightly floured surface into approx 1/4 inch thick.
Cut out into happy little gingerbread men with your cookie cutter.
Place on cookie sheets lined with parchment paper and bake for approx 7-10 minutes.
Decorate the sh-t out of them.

This is such a simple recipe! I'm a little late reading it - but I'm sure they will taste the same even AFTER the holiday season is finished! Thanks for sharing. |
