Bacon & Egg Breakfast Cups plus 11 More Brunch Recipes to Try

I firmly believe in brunch- it's the best of both worlds! You get to sleep in and then eat an enormous meal of all the best stuff from breakfast and lunch. I'm not sure why anybody eats anything but brunch foods!

Case in point: Bacon & Egg Breakfast Cups...

You'll need:
Muffin Tray 
6 eggs 
6-8 bacon strips 


(makes 6 bacon-egg cups)

Using raw bacon, microwave the bacon strips so that they are halfway cooked. Alternatively, try precooked bacon (heat precooked bacon only if stiff and only for a few seconds just to make them more flexible).
 

After lightly greasing a muffin tray with vegetable spray (eg. Pam) or butter, line the muffin cups with the bacon strips.


Crack eggs into muffin tin cups. Put in oven at 400 degrees, bake for about 8 minutes until eggs are cooked to desired firmness.

Final Product


Set on plate, toast some bread and sit down to enjoy!

@LyrissaSmillie - I use turkey bacon and pork bacon interchangeably all the time and generally can't tell the difference! Pork bacon curls up more, while turkey bacon stays flatter, so I think in the case of THIS recipe, turkey bacon might actually be the better choice anyway! It's certainly the healthier choice :)
