Cheesy Stuffed Mushrooms & Prosciutto-Wrapped Asparagus

Posted by Alexandra | Monday March 7, 20116 comments

Tasty, quick, and sure to please - try one of these easy appetizers the next time you have unexpected guests!  Chances are you already have these ingredients on hand.

Cheese Stuffed Mushrooms with Garlic

Fresh Mushrooms
2 cloves Garlic, minced
Cheese (any favourite), shredded
Olive Oil or Cream Cheese (according to taste)

Wash mushrooms and remove the stems, setting them aside.

Chop the stems finely, then combine with minced garlic and olive oil (or cream cheese) to make a sticky filling.

Stuff the washed mushroom tops with the filling, arrange in a shallow baking tray and sprinkle with your favourite shredded cheese.

Bake at 375F (180C) until the cheese melts.

While you're waiting on the mushrooms, whip up my BFF's Prosciutto-Wrapped Asparagus to serve alongside:

Fresh Asparagus
Prosciutto
Olive oil
Salt and Pepper (to taste)

Wash Asparagus and chop off ends.  Wrap the Prosciutto around the ends of 2 stalks, then drizzle with 1 teaspoon of Olive Oil.  Add Salt and Pepper to taste (if desired).

Heat through in the oven for 10 minutes at 375F (180C), or toast them on the grille.

Finito!

I made these yesterday-- they were so delish (even though I couldn't enjoy them fully because of the flu), but my house chowed them down within 5 minutes!
