Choco Chip Clusters Recipe

Fair warning to all the chocolate lovers reading here: these easy-to-make treats are addictive!  I have alternately called them "Chocolate Chippy Balls" or "Those Chips and Chocolate Thingamabobbers", but for the sake of this article I'm going with Choco Chip Clusters:

1 1/2 cup Chocolate Chips
1 1/2 cup Peanut Butter Butter Chips
1 1/2 Butterscotch chips
1 large bag of plain potato chips
1 1/2 cup peanuts
mini baking cups

Using either a double boiler or 2 pots stacked, boil water in the bottom pot and place all chocolate, peanut butter, and butterscotch chips in the top.  Stir until it melts and the consistency is smooth.

Add peanuts and stir until coated with chocolate.

Add potato chips and stir until completely coated with chocolate.  If it looks dry, add some extra chocolate, peanut butter, or butterscotch chips to the mix.  The beauty of this recipe is that you can play around with the ingredients.

Once all the potato chips and peanuts are completely covered with melted chocolate, turn your stove to a low setting and transfer to mini baking cups.

Allow chocolate to dry.  This recipe makes about 60 clusters.

Actually I could really go for one of these right now. I'm picturing them in the freezer at my house right now and I do wish that I had brought some into the office!

Chips & chocolate sounds super decadent! I love all the recipes on this site. My hubby always asks for the grilled cheese w/ avocado & bacon I got from here. Maybe I will try these out for a New Year's nibble! :D
