Discovered the Cloud 9 Brand Gluten Free All Purpose Baking Mix at Costco last week and so far I love it! Have made blueberry pancakes - turned out awesome. Going to try dark chocolate chip cookies this weekend. I like this baking mix because a) It's gluten free and b) you can use it in any recipe as a cup for cup replacement for flour. At about $14 for a 1 kg bag it is really reasonably priced. The pancakes I made with it were really moist - not dry like some other gluten free mixes I have tried. Looking forward to much more baking!
