Ingredients:
½ cup (125 mL) fresh lemon juice
1 tsp (5 mL) lemon zest
½ cup (125 mL) granulated sugar
Pinch salt
4 egg yolks
2 tbsp (30 mL) cold butter, cubed
⅓ cup (75 mL) toasted coconut flakes
1 (510 g) McCain® Deep ’n Delicious® Vanilla Cake, cut and thawed
In small saucepan, heat lemon juice and zest, sugar and salt over medium heat for 5 to 7 minutes or until mixture is hot and sugar is dissolved. In heatproof bowl, whisk egg yolks with ¼ cup (60 mL) of the hot liquid; whisk into remaining liquid in saucepan. Cook, whisking constantly, for 3 to 5 minutes or until lemon curd coats the back of a spoon. Stir in butter, one cube at a time. Let cool.
Place plastic wrap directly on surface. Refrigerate until completely chilled (curd will continue to thicken as it chills). Top each piece of McCain® Deep 'n Delicious® Vanilla Cake with some lemon curd and sprinkle with coconut.
Tip: Store lemon curd in airtight container in the refrigerator for 3 to 5 days. You can also use store-bought lemon curd.

this is sooo easy to make and so very tasty too...i love trying new ideas with Mcain frozen desserts ..there are many easy ways to turn great cake into something that looks and tastes like you fussed over it !!!! i will make this again!!
I am not the best baker at all,I was a little worried about this recipe at first. But this was so easy and it turned out perfect. Such a crowd pleaser and my family went nuts that I had actually made this all by myself. They have experienced my baking nightmares before, but they are all so nice to me and they eat it and pretend to love it , even if it is terrible. But this is a wonderful recipe and we will be having it again this coming weekend.
I thought this was going to prove to be a daunting recipe however the vanilla lemon coconut cake recipe was actually easy to prepare. I love the vanilla cake plain and lemon and coconut are two of my favourite flavours! This cake is fun to tweak the recipe and can easily substitute coconut for another topping. Almond slices might be nice. I think this is a great tasting and easy to make dish and I recccomend it and will make again.
My mom and I tried out this recipe the other day, she had the cake in the fridge & myself knowing that the cake on its own is very dry, we needed to turn it up a notch. This recipe did the job, nice hint of lemon & coconut flavors.
Lemon vanilla and coconut who could ask for a better combination! Absolutely amazing and a hit at any party I highly recommend this recipe to everyone!
This cake wasn't too sweet and it had a really lovely lemon flavour. It was quite easy to make too. Everyone loved it. I will definitely make it again.
So quick and easy. A nice recipe that will add the right amount of 'homemade' touches to a McCain Vanilla Cake in order to serve at more formal occassions - or just to impress your guests. Love the touches of lemon, this will be my 'go to recipe' for summer. Citrusy and fresh tasting. My family and guests really enjoyed this and all thought it came directly from my oven!
Quick and easy to make! Which I love! I made whipped cream out of frozen coconut milk to top it! The lemon was a nice touch with the coconut, I spiralled lemon peel as a garnish
