1/4 cup olive oil
2 tbsp Dijon mustard
1 tbsp finely chopped fresh rosemary
4 tsp honey
1 tsp lemon juice
4 bone-in chicken thighs (about 1 1/4 lb or 625 g)
1/2 tsp each salt and pepper
1 bag (650 g) McCain® Red Skin Classic Wedges
Balsamic Brussels Sprouts:
1 lb Brussels sprouts, trimmed and halved lengthwise through stems
2 tbsp prepared balsamic glaze
Preheat oven to 450˚F (230˚C). Stir together 1 tbsp (15 mL) of the oil, mustard, rosemary, honey and lemon juice; toss with chicken. Season with half of the salt and pepper. Arrange in single layer on foil-lined baking sheet. Bake for 20 to 25 minutes or until juices runs clear and chicken is no longer pink inside.
Bake McCain® Red Skin Classic Wedges according to package directions.
Balsamic Brussels Sprouts: Meanwhile, in a large skillet, heat remaining oil over medium-high heat; cook Brussels sprouts and remaining salt and pepper, stirring occasionally, for 10 minutes or until golden brown and tender. Drizzle with balsamic glaze; sauté for 1 or 2 minutes, or until Brussels sprouts are coated.
Serve chicken with McCain® Red Skin Classic Wedges and Balsamic Brussels Sprouts.
The Honey Mustard chicken and McCain Red Skin Wedges Recipe was phenomenal. Everyone at home loved it and it was so quick and easy to make! I will be sharing this and saving a copy for myself !

Classic sunday dinner at my house but this takes it up a notch. The bressel sprouts are delicious and if you use the wedges to soak up the balsamic reduction it's even better... adding this to the weekly menu.
Simple to make. Does take long at all. Very tasty. I will be making this for family gathering. You can add your own spices to it as well. Easy to customize

The chicken the Brussels sprouts Everything was just wonderful. ..the only thing we didn't use in this recipe wss actually the Rosemary and used fresh DILL instead and it was perfect. I definitely will be making this again and again and highly recommend it to everyone!
This is a quick and tasty weeknight meal which my family very much enjoys - even the sprouts! The McCain Red Skin Wedges add a nice hot side to the chicken and the prep time is so fast that I can be on to other quick jobs while supper is cooking and before my hungry family arrives to make quick work of a tasty meal!
The Red Skin Wedges are another McCain product that I highly recommend.
i have added this to a favorite chicken recipe!!!
the chicken was perfect the taste of all the flavours (honey mustard, seaonsing) along with the wedges as a side and bruseel sprouts gave it such a variety of flavour, texture, and feeling in the mouth.
Chicken was baked perfectly, I found you can even add more salt and pepper than necessarily, also suggestion is sprinkle some mazzrella cheese in the oven on top of the chicken for added flavour if want to ;)
the potato red skin wedges were a hit!!! I made along side a small sauce of garlic mayo oil as a dip for the wedges, gave it my own twist.
The bruseel sporuts cooke perfectly , just can be quite gassy for some stomachs ;)
