1 cup of McCain® Diced Hashbrowns
6 large eggs
1/2 cup ricotta
1 cup chopped ham
1 tsp coarse salt
1/4 tsp ground pepper
1 tsp. olive oil
2 cups baby spinach
½ cup of red pepper, diced
Salt & pepper to taste
Preheat oven to 350°F. In a bowl, whisk eggs, ricotta, and chopped ham; season with coarse salt and ground pepper.
Preheat a small skillet over medium-high heat and sauté McCain® Breakfast Diced Hashbrowns as per instructions on package and remove from heat.
In a medium ovenproof nonstick skillet, heat olive oil. Add baby spinach; cook until wilted. Stir in egg mixture and cooked McCain® Diced Hashbrowns and cook until edge sets, 1 minute. Transfer skillet to oven.
Cook frittata until center is set, 15 minutes. Invert frittata onto a plate to serve. Let stand 5 minutes before cutting into wedges.
Optional: Cherry tomatoes
I love frittatas and this one is no different. The addition of McCains hash browns makes the meal a little more filling that your basic frittata. The recipe can easily be adjusted to add those leftover veggies that we all seem to have in our fridges, but the fresh spinach that is in season makes it better.
This was easy to make and I like the addition of vegetables. Since there are only two of us, I had leftovers that were still tasty for my lunches. I added old cheddar cheese to make it appeal to my husband more. Not sure that I would make it again for our family.
Omg my family loves this! My favorite part is how quick & easy it was to make. It is definitely going to be a biweekly meal at our house possibly Christmas morning brunch! Yummy

A easy egg recipe that can be tweaked any way you like. You can add anything you like. Cooks up fast and tastes great!! Make it kid friendly by substituting ingredients, I always like adding lots of cheese!!
I didn't use all the ingredients that is there. But I did add my own. It was good. And easy to customize. My brother used all the Ingredients that was listed and he loved it.

Loved trying out this recipe. We don't eat ham so we substituted cooked diced chicken and it turned out great. Again, one of those dishes that are easy to put together and can be enjoyed at breakfast or dinner. My kids, husband and I all enjoyed it so will be trying it again.
Vraiment bon et facile à faire, ne prend que quelques minutes. J'aime faire cette recette quand on reçoit la famille car on peut la laisser au four en attendant et on sert plusieurs personnes avec cette recette. S'agence bien à d'autres mets dans un brunch du dimanche.
LA famiglia spinach ricotta frittata recipe is a relatively easy enough recipe to follow, more chopping and prep I found as well as it required more attention while cooking then the other recipes I have followed from #McCain. I did not mind the finished taste of the dish which is why I recommended it however my children and husband were not as keen on it so it is not likely I will prepare this dish again.
