I always use Maldon Sea Salt Flakes in my homemade salted caramel sauce and I sprinkle it over my homemade fudge. It tastes delicious and add such flavor to my desserts. A little bit goes a long way.
Pricey, but so worth it. I only use as a finishing salt so it lasts a lot longer. A fine salt for fine food and creates agreed visual impact.
